Characteristic pinkish to red-purple colour in the leaner part and shiny appearance in the fat, with a pleasant and characteristic aroma, homogeneous and non-fibrous texture, delicate and slightly salty flavour. Curing in Natural Dryer for 24 to 36 months. The characteristic microclimate of cold and dry temperatures in the winter and extreme heat in the summer renders this Region the Capital of “Porco Preto” dry cured Ham.
